Meal prep is very important to me, and I love to create recipes that will be easy to bring on the go. This is my favorite recipe I use on a weekly basis when I meal prep. When I meal prep, I think about quick and simple meals to ensure the meals won’t go to waste. This pasta salad is very versatile and can be customized based on your favorite toppings. I like to keep it simple with two of my favorite toppings. This is by far a staple in our household.
- Pasta of Your Choice
- Black Olives
- Grape Tomatoes
- Italian Dressing
When I feel like I need to switch things up a bit, I will add in a few cucumbers, pepperoni, or cheese.
- Boil pasta as directed,
- Drain and put into plastic container
- Cut up tomatoes and olives and put in a smaller container
- Before work each night, combine pasta, desired olives & tomatoes, and amount of Italian dressing.
- I use about 1 to 2 Tablespoons per 3/4 cup cooked pasta.
I like to keep the ingredients of this pasta salad in separate containers so the pasta will last longer. This guarantees the pasta can last for at least 5 days before starting to become mushy. If you are only cooking for one meal, or will use it within the next day, the pasta will be fine.
This recipe can be a great side dish for a party!
